Michael Mosteller tracks alcohol for a living.

He is the Memphis franchise owner of Toronto-based Bevinco, an alcohol inventory company designed to reduce “shrinkage,” the alcohol that bartenders spill, overpour, give away or steal–estimated at roughly 20 percent, says the Memphis Commercial Appeal.

Working with a Palm Pilot scanner and electronic scale, Mosteller calculates exactly how much liquor, wine and beer was dispensed by bartenders since his last weekly audit. That number is squared with receipts. Discrepancies can mean trouble for bartenders.
